Method
- Preheat air fryer to 375°F (190°C).
- Set up three bowls: flour with salt/pepper, beaten eggs, and coconut mixed with panko.
- Coat shrimp in flour, dip in egg, then coat with coconut-panko mix.
- Arrange shrimp in air fryer basket in a single layer.
- Spray lightly with cooking spray.
- Air fry 8–10 minutes, flipping halfway, until golden and crispy.
Notes
Best served fresh. For make-ahead, bread shrimp and refrigerate, then air fry just before serving.
