Ingredients
  

  • 1 lb large shrimp peeled & deveined (tails on)
  • ½ cup all-purpose flour
  • 2 eggs beaten
  • 1 cup shredded coconut unsweetened or sweetened
  • ½ cup panko breadcrumbs
  • ½ tsp salt
  • ¼ tsp black pepper
  • Cooking spray

Method
 

  1. Preheat air fryer to 375°F (190°C).
  2. Set up three bowls: flour with salt/pepper, beaten eggs, and coconut mixed with panko.

  3. Coat shrimp in flour, dip in egg, then coat with coconut-panko mix.

  4. Arrange shrimp in air fryer basket in a single layer.

  5. Spray lightly with cooking spray.

  6. Air fry 8–10 minutes, flipping halfway, until golden and crispy.

Notes

Best served fresh. For make-ahead, bread shrimp and refrigerate, then air fry just before serving.
