Method
- Salt eggplant slices, let rest 20–30 minutes, then pat dry.
- Set up breading station with flour, eggs, and breadcrumb-Parmesan mix.
- Dip slices in flour, egg, then breadcrumbs. Spray lightly with olive oil.
- Air fry at 380°F for 10–12 minutes, flipping halfway.
- Layer eggplant with marinara and mozzarella. Repeat layers.
- Air fry another 3–4 minutes until cheese melts. Garnish with basil.
Notes
Salt step is key to prevent soggy eggplant.
Use shredded mozzarella if fresh isn’t available.
