- 2 medium eggplants sliced into ½-inch rounds
- 1 cup flour
- 2 eggs beaten
- 1 ½ cups panko breadcrumbs
- ½ cup grated Parmesan cheese
- 1 ½ cups marinara sauce
- 8 oz fresh mozzarella sliced
- Fresh basil leaves
- Olive oil spray
Salt eggplant slices, let rest 20–30 minutes, then pat dry.
Set up breading station with flour, eggs, and breadcrumb-Parmesan mix.
Dip slices in flour, egg, then breadcrumbs. Spray lightly with olive oil.
Air fry at 380°F for 10–12 minutes, flipping halfway.
Layer eggplant with marinara and mozzarella. Repeat layers.
Air fry another 3–4 minutes until cheese melts. Garnish with basil.
Salt step is key to prevent soggy eggplant.
Use shredded mozzarella if fresh isn’t available.
