Method
- Slice zucchini into rounds.
- Whisk eggs in one bowl. Mix breadcrumbs, Parmesan, and spices in another.
- Dip zucchini slices in egg, then breadcrumb mixture.
- Arrange in a single layer in air fryer basket; spray lightly with oil.
- Cook at 400°F for 8–10 minutes, flipping halfway.
- Serve warm with marinara or your favorite dip.
Notes
Best enjoyed fresh. For a gluten-free version, use GF breadcrumbs.
