Crispy, golden zucchini chips made easy in the air fryer. Perfect as a snack, side dish, or appetizer. Ingredients:

Ingredients
  

  • 2 medium zucchini sliced into ¼-inch rounds
  • 1 cup panko breadcrumbs
  • ½ cup Parmesan cheese grated
  • 2 eggs beaten
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper to taste
  • Olive oil spray

Method
 

  1. Slice zucchini into rounds.

  2. Whisk eggs in one bowl. Mix breadcrumbs, Parmesan, and spices in another.

  3. Dip zucchini slices in egg, then breadcrumb mixture.

  4. Arrange in a single layer in air fryer basket; spray lightly with oil.

  5. Cook at 400°F for 8–10 minutes, flipping halfway.
  6. Serve warm with marinara or your favorite dip.

Notes

Best enjoyed fresh. For a gluten-free version, use GF breadcrumbs.
