Ingredients

Cider Base

  • 10 cups apple cider fresh-pressed if available
  • 0.5 cup granulated sugar or brown sugar for deeper flavor

Spices

  • 2 sticks cinnamon sticks tie in cheesecloth for easy removal
  • 1 teaspoon whole cloves place in a spice bag
  • 1 teaspoon whole allspice lightly crush for extra aroma

Instructions

Preparation

  • Pour apple cider and sugar into a large pot and stir gently.

Simmering

  • Bring to a gentle simmer over medium-high heat, watching for soft bubbling around the edges.
  • Lower heat to maintain a bare simmer and cook uncovered for 20 minutes, stirring once midway.

Finishing

  • Remove the spice bundle and skim any foam for a clear cider.
  • Ladle into mugs and garnish with cinnamon sticks before serving.

Notes

I always skim the foam after 5 minutes to keep the cider crystal clear.
Leftover cider keeps up to 5 days in a sealed container in the fridge—cool within two hours.
You can freeze extra cider in ice cube trays for quick reheating.
