Ingredients
  

  • 3.25 cup all-purpose flour or bread flour
  • 1.25 tsp coarse kosher sea salt
  • 0.5 tsp active dry yeast
  • 1 1/2 cup warm water plus 2 tablespoons
  • 6 cloves garlic fresh or roasted, minced
  • 1 cup parmesan cheese freshly grated or shredded, divided
  • 0.25 tsp rosemary freshly minced (optional)

Instructions
 

  • Whisk the flour, salt, and yeast in a medium bowl. Gradually add the water while stirring with a wooden spoon until incorporated. Mix the dough gently and form into a rough ball.
  • Transfer to a large clean (ungreased) bowl. Cover with plastic wrap and let the dough rise in a draft-free area at room temperature until covered with tiny bubbles and more than doubled in size (about 12 to 18 hours).
  • Preheat the oven to 450 degrees Fahrenheit (232 degrees Celsius) with a Dutch oven inside for 30 minutes.
  • Knead in minced garlic, 1/2 cup of cheese, and rosemary. Transfer the dough onto parchment paper and allow it to rest for 30 minutes. Score an X in the top of the loaf.
  • Carefully remove the Dutch oven, place the shaped dough inside, cover, and bake for 30 minutes. Remove the lid, sprinkle with remaining cheese, and bake for an additional 8-12 minutes until dark but not burnt. Cool for at least 30 minutes before slicing.
