Blue Hawaiian Mocktail

A gorgeous non-alcoholic twist on the classic tropical cocktail, made with pineapple juice, orange juice, cream of coconut, and lime, with a vivid blue hue from natural blue spirulina powder. Ready in just 5 minutes and perfect for any summer occasion.

Ingredients
  

  • 1 1/2 oz pineapple juice
  • 1 oz orange juice
  • 1/2 oz cream of coconut
  • 3/4 oz lime juice
  • 1/4 tsp blue spirulina powder
  • Sparkling water to top
  • Salt and dried edible flowers for the rim
  • Pineapple slice and pineapple frond for garnish
  • Lime slice for garnish

Instructions
 

  • Mix the salt and dried edible flowers together in a shallow dish. Moisten the rim of a cocktail glass with a lime wedge, then roll the rim in the salt mixture until fully coated. Set aside.
  • Fill a cocktail shaker with ice. Add the pineapple juice, orange juice, cream of coconut, lime juice, and blue spirulina powder. Shake vigorously for 20 to 30 seconds until well chilled and combined.
  • Double strain the mixture through a fine mesh sieve into the prepared glass over fresh ice. Top with sparkling water to taste.
  • Garnish with a pineapple slice, pineapple frond, and lime slice. Serve immediately.

Notes

Blue spirulina is flavorless and provides the vivid blue color. It can be found at health food stores or online.
Cream of coconut is sweetened — do not substitute with unsweetened coconut cream.
For the clearest, smoothest color, double strain using both the shaker strainer and a fine mesh sieve.
To make ahead, combine all ingredients except sparkling water and refrigerate the base for up to 24 hours. Shake with ice and top with sparkling water just before serving.
To make a pitcher, multiply ingredients by the number of servings. Add sparkling water per glass just before serving.
