Ingredients
  

  • 2 chicken breasts or thighs
  • 2 cups penne pasta
  • 2 tbsp Cajun seasoning
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 bell peppers sliced
  • 1 can diced tomatoes
  • 1 cup heavy cream
  • ½ cup Parmesan cheese grated
  • 2 tbsp olive oil
  • Fresh parsley chopped

Instructions
 

  • Cook pasta until al dente; reserve some pasta water.

  • Season chicken with Cajun spice, sear until golden and cooked through. Slice.

  • In the same pan, sauté onion, garlic, and peppers.

  • Add diced tomatoes, simmer, then stir in cream and Parmesan.

  • Toss pasta and chicken into sauce, adjust with pasta water if needed.

Notes

Add cayenne for more spice, or swap cream with half-and-half for a lighter dish.
