Ingredients
  

  • 2 chicken breasts or thighs
  • 2 cups penne pasta
  • 2 tbsp Cajun seasoning
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 bell peppers sliced
  • 1 can diced tomatoes
  • 1 cup heavy cream
  • ½ cup Parmesan cheese grated
  • 2 tbsp olive oil
  • Fresh parsley chopped

Method
 

  1. Cook pasta until al dente; reserve some pasta water.

  2. Season chicken with Cajun spice, sear until golden and cooked through. Slice.

  3. In the same pan, sauté onion, garlic, and peppers.

  4. Add diced tomatoes, simmer, then stir in cream and Parmesan.

  5. Toss pasta and chicken into sauce, adjust with pasta water if needed.

Notes

Add cayenne for more spice, or swap cream with half-and-half for a lighter dish.
