Ingredients
  

  • 1 tbsp vegetable oil
  • 1 ring andouille sausage sliced into 1/4-inch rounds
  • 1 large onion diced
  • 1/2 cup celery diced
  • 2 tsp garlic minced
  • 1 tsp Cajun seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 4 cups chicken broth
  • 4 large russet potatoes peeled and cubed
  • 1/2 cup heavy whipping cream
  • 1 cup mild cheddar cheese shredded
  • parsley chopped, for garnish

Instructions
 

  • Heat vegetable oil in a large pot over medium heat.
  • Add sausage and cook until browned, about 3–4 minutes. Remove and set aside.
  • In the same pot, sauté onion, celery, and bell pepper for 5–8 minutes until softened.
  • Add garlic and cook for 1 minute.
  • Add Cajun seasoning, salt, pepper, paprika, cayenne, broth, and potatoes.
  • Simmer for 20–25 minutes until potatoes are tender.
  • Return sausage to the pot. Stir in cream and cheddar.
