small red onion
thinly sliced

fresh basil leaves

Parmesan shavings

extra-virgin olive oil
Salt & pepper to taste
Method
Cook pasta in salted water until al dente. Drain and rinse under cool water.
In a large bowl, combine pasta, cherry tomatoes, mozzarella, and red onion.
Tear in fresh basil leaves and gently toss.
Drizzle with olive oil, season with salt and pepper.
Sprinkle Parmesan on top before serving.
Notes
Best served the same day. Add basil and Parmesan just before serving if making ahead.
