Classic Meatloaf Recipe

Ingredients
  

For the Meatloaf:

  • 500 g ground beef
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 cup breadcrumbs
  • 1 large egg
  • 120 ml milk
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • 1 tsp dried parsley
  • ½ tsp salt
  • ½ tsp black pepper

For the Glaze:

  • 4 tbsp ketchup
  • 1 tbsp brown sugar
  • 1 tsp apple cider vinegar

Instructions
 

  • Prepare the Meatloaf:
  • Preheat oven to 180°C (350°F) and grease a baking dish or loaf pan.
  • Combine breadcrumbs and milk in a small bowl and let sit for 2–3 minutes.
  • In a large bowl, mix ground beef, soaked breadcrumbs, onion, garlic, egg, ketchup, mustard, and seasonings.
  • Mix gently until just combined.
  • Shape into a loaf and place in prepared dish.
  • In a small bowl, mix glaze ingredients and spread half over the meatloaf.
  • Bake for 40 minutes, remove, and spread remaining glaze.
  • Bake for another 15–20 minutes until fully cooked.
  • Let rest for 5–10 minutes before slicing.

Notes

Store leftovers in the fridge for up to 3 days or freeze slices for up to 2 months.
You can substitute part of the beef with turkey for a lighter version.
Letting the meatloaf rest before slicing helps it hold its shape and stay juicy.
