Ingredients
  

  • 3/4 cup all-purpose flour
  • 3/4 cup brown sugar packed
  • 2 tsp ground cinnamon
  • 7 Tbsp salted butter cold
  • 1 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup salted butter softened
  • 3/4 cup granulated sugar
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
  • 8 oz. sour cream room temperature
  • 1/4 cup granulated sugar
  • 1 1/2 tsp ground cinnamon

Instructions
 

  • Preheat the oven to 350°F.
  • In a food processor, blend together the all-purpose flour, brown sugar, and cinnamon.
  • Cut the cold butter into cubes and add it to the processor. Pulse until the mixture is crumbly.
  • In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, and salt.
  • In another bowl, blend the softened butter and granulated sugar until well combined.
  • Add the eggs and vanilla; blend until combined.
  • Mix in the sour cream until combined.
  • Add the dry ingredients to the wet ingredients and blend on low speed until just combined.
  • Line an 8x8 baking dish with parchment paper and spread half of the cake batter evenly.
  • Mix the granulated sugar and ground cinnamon in a small bowl and sprinkle over the first layer of cake batter.
  • Add the rest of the cake batter on top and spread evenly.
  • Add the prepared crumb mixture on top and bake for 45-50 minutes.
  • Allow the cake to cool for about 15 minutes and then cut into desired servings.
