  • 4 large eggs beaten
  • 1 cup spinach chopped
  • 0.5 cup cheddar cheese shredded

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, whisk together the cottage cheese, eggs, and chopped spinach until well combined.
  • Stir in the shredded cheddar cheese, seasoning with salt and pepper.
  • Pour the mixture into greased muffin tins, filling each about ¾ full, and bake for 25 minutes or until golden and firm to the touch.
