Ingredients
  

  • 1 cup cottage cheese preferably low-fat
  • 3 large eggs
  • 1 cup fresh spinach chopped
  • 1 cup shredded cheese such as cheddar or mozzarella
  • 1 pinch salt
  • 1 pinch black pepper

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease a pie dish thoroughly.
  • In a bowl, mix cottage cheese, eggs, spinach, and a pinch of salt and pepper, stirring until well combined.
  • Pour the mixture into the prepared pie dish and bake for about 30-35 minutes or until the top is lightly golden.
  • Allow to cool for a few minutes before slicing.

Notes

Serve warm, accompanied by a side salad.
