  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup dried cranberries
  • 0.5 cup chopped almonds
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon orange zest
  • 1 tablespoon orange juice

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a baking dish.
  • In a large bowl, mix together the butter and sugars until softened.
  • Add the eggs and vanilla, and stir in the flour, baking powder, and salt until combined.
  • Fold in the cranberries and almonds, then spread the batter into the prepared dish.
  • Bake for 25-30 minutes or until golden around the edges.
  • For the frosting, beat together the cream cheese, powdered sugar, orange zest, and orange juice until smooth.
  • Spread the frosting over the cooled bars and cut into squares.

Notes

These bars can be stored in the fridge for up to 5 days, or frozen for up to 3 months.
