Ingredients

  • 12 oz small pasta noodles
  • 2 cup frozen peas thawed
  • 12 oz thick cut bacon cooked and chopped
  • 1/2 cup freshly grated parmesan cheese
  • 3/4 cup mayonnaise
  • 2 TBS avocado oil
  • 1 TBS apple cider vinegar
  • 1 tsp granulated sugar to taste
  • 1 tsp salt to taste
  • 1/2 tsp garlic powder to taste
  • 1/2 tsp onion powder to taste
  • 1/4 tsp black pepper to taste

Instructions

  • Bring a large pot of water to a boil and cook the pasta until it’s perfectly al dente, offering a slight bite. Once cooked, drain thoroughly and refresh with cold water.
  • While the pasta is cooking, ensure your peas are thawed, bacon is crispy and chopped, and parmesan is ready. Set these aside.
  • In a small bowl, mix the mayonnaise, avocado oil, vinegar, sugar, salt, garlic powder, onion powder, and black pepper. Whisk thoroughly to create a smooth, creamy dressing.
  • Combine the cooled pasta, peas, bacon, and parmesan in a large bowl. Pour over the dressing and gently mix until each component is covered with creamy goodness.
  • Cover and chill the salad in the fridge for about 1 to 2 hours, allowing the flavors to marry. Alternatively, you can enjoy it right away.
