Ingredients
  

  • 3 tablespoons avocado oil
  • 1 small onion grated
  • 4 cloves garlic minced
  • 56 ounces canned tomatoes in natural juices
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon Italian seasoning
  • 16 ounces penne pasta optional

Instructions
 

  • Begin by heating the avocado oil in a large non-stick skillet over medium heat until it shimmers invitingly. Add the grated onion and minced garlic, cooking until they soften and fill your kitchen with a delightful aroma.
  • Stir in the canned tomatoes, bringing everything to a lively boil. Once boiling, reduce the heat to low and let the sauce simmer, allowing the flavors to deepen for about 30 minutes.
  • Next, season the sauce with sugar, salt, pepper, and Italian herbs, stirring to combine. Blend the sauce with an immersion blender until it's luxuriously smooth.
  • Cook the pasta according to package instructions. Once done, drain and reserve a bit of pasta water. Toss the pasta into the sauce, adding the reserved water, and let it all simmer together for an additional 5 minutes.
