  • 4 cups diced rhubarb

  • Preheat your oven to 325°F, ensuring even heat distribution.
  • For the crust: Combine the flour, powdered sugar, and melted butter in a large bowl. Use a mixer to blend until the mixture resembles coarse crumbs.
  • Distribute the crumbly mixture into a well-greased 9x13 pan. Press it lightly to form an even layer. Bake for 15 minutes or until it sets but stays pale.
  • For the filling: In the same bowl, whisk the eggs gently. Add sugar, almond flour, salt, and nutmeg. Mix in the diced rhubarb until well combined.
  • Pour the rhubarb mixture over the baked crust. Return to the oven and bake for an additional 60 minutes, or until the filling is set and lovely golden on the edges.
  • Allow the bars to cool completely before cutting. Store remaining bars in the refrigerator to keep them fresh.
