Ingredients
  

  • 1 tablespoon avocado oil
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 cup basmati rice
  • 1 1/2 cups water
  • 1/2 teaspoon salt
  • 1/2 teaspoon oregano
  • 1/4 teaspoon turmeric
  • 1/2 red onion sliced
  • 1 teaspoon sumac
  • 1/4 teaspoon salt
  • 1 cup cherry tomatoes halved
  • 2 Persian cucumbers halved lengthwise and sliced
  • 1 15-ounce can chickpeas drained and rinsed
  • 1/2 cup kalamata olives sliced
  • 1/4 cup crumbled feta
  • 1/4 cup chopped fresh parsley
  • Greek yogurt sauce for serving

Instructions
 

  • Warm the avocado oil in a medium saucepan over medium heat. Add the diced onion, stirring until it becomes translucent and fragrant, about 5 minutes.
  • Mix in the minced garlic and sauté for an additional minute. The aroma will be irresistible.
  • Stir in the basmati rice, water, salt, oregano, and turmeric. Bring to a gentle boil, then cover and reduce the heat to low. Let it cook undisturbed for 15 minutes.
  • Take off the heat and let it sit with the lid on for another 5 minutes. Fluff the rice gently with a fork to separate the grains.
  • In another bowl, mix sliced red onions with sumac and a pinch of salt, allowing them to marinate while you prepare other toppings.
  • Divide the rice into bowls, topping each with the marinated onions, halved tomatoes, sliced cucumbers, chickpeas, olives, feta, and parsley.
  • Serve with Greek yogurt sauce for a creamy finish.
