Ingredients
  

  • 3/4 cup Water lukewarm
  • 2 tsp Yeast
  • 2 tsp Sugar
  • 2 cups All-purpose flour
  • 1 tsp Salt
  • 2 tbsp Avocado oil
  • 3/4 cup Mozzarella cheese shredded

Instructions
 

  • In a small bowl, mix warm water, yeast, and sugar. Let it stand until bubbles form and it becomes fragrant, about 5-10 minutes.
  • In a large bowl, whisk together the flour and salt. Pour in the frothy yeast mixture along with the avocado oil.
  • Stir with a spoon to make a rough dough. Turn onto a floured surface, knead for 10 minutes, feeling the dough become smooth and elastic.
  • Transfer the dough to a greased bowl, cover, and let rise in a warm place for about 1-1.5 hours until it's doubled in size.
  • Gently deflate the dough, divide into 8 portions, and shape into balls. Rest covered for 5-10 minutes to prevent drying.
  • Roll each ball into a small circle. Place cheese in the center, fold the edges over, and seal. Roll again into a disc.
  • Let the discs rest on a lined tray for 20 minutes. Heat a skillet with a brush of oil, wiping excess with a tissue.
  • Cook each flatbread for 2-3 minutes per side until golden and puffy. Brush with a touch of melted butter, if desired.
