Ingredients
  

  • 1 Tbsp avocado oil
  • 1 lb lean ground beef
  • 1 medium onion chopped
  • 1 medium green bell pepper chopped
  • 2 cloves garlic minced
  • 3/4 tsp salt
  • 3/4 tsp black pepper
  • 1 (14.5oz) can diced tomatoes
  • 1.5 cups low-sodium beef stock
  • 1 cup uncooked white long grain rice
  • 2 Tbsp tomato paste
  • 1.5 tsp Worcestershire sauce
  • 1 cup shredded cheese blend Cheddar or Monterey Jack
  • 1 Tbsp fresh parsley chopped, optional

Instructions
 

  • Heat the avocado oil in a large skillet over medium heat. Press the ground beef into a flat, even layer and let it brown undisturbed for about 4 to 5 minutes until you notice a nice caramelized crust on the bottom.
  • Add the chopped onion, green bell pepper, and minced garlic, stirring to break the beef apart. Cook, stirring occasionally, until the beef is fully browned and the vegetables are nice and tender, roughly 5 to 6 minutes.
  • Pour in the diced tomatoes with their juices, the beef stock, rice, tomato paste, and Worcestershire sauce. Stir everything together and bring the mixture to a boil over high heat.
  • Once boiling, reduce the heat to low, cover the skillet, and simmer gently for about 20 to 25 minutes, until the rice has absorbed the liquid and is tender.
  • Remove from heat and give everything a good stir. Sprinkle the shredded cheese evenly over the top, cover again, and let sit for about 2 minutes to allow the cheese to melt.
  • Finish by sprinkling chopped fresh parsley over the skillet if desired, then serve warm and enjoy.

Notes

This skillet dinner is both hearty and straightforward, making it a reliable meal any day of the week. For a super quick version, skip fresh onion and garlic, and add 1/2 teaspoon each of onion powder and garlic powder right when you add the bell peppers.
