Ingredients
  

  • 5 strips bacon thick cut works best
  • 1 pound spicy chicken sausage casings removed
  • 1 medium onion chopped
  • 5 cloves garlic minced
  • 2 cups vegetable broth or chicken broth
  • 4 cups water
  • 4 large red potatoes diced, skins on
  • 1/4 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1 small bunch kale torn, stems removed
  • Salt and pepper to taste

Instructions
 

  • Cut the bacon into small pieces and add to a pot. Cook over medium-high heat until it starts to brown, releasing its delightful aroma.
  • Add the sausage to the pot. Stir occasionally and let it cook until both meats are brown and crispy, about 15 minutes.
  • Toss in the chopped onions and minced garlic, allowing them to soften and infuse their flavors for about 2-3 minutes.
  • Pour in the vegetable broth, water, diced potatoes, and Italian seasoning. Bring to a boil, then reduce the heat to a simmer.
  • Let the soup simmer for 10-15 minutes until the potatoes are tender and inviting.
  • Stir in the heavy cream and kale, cooking for another 5 minutes until the kale is tender. Season with salt and pepper to taste.
