Ingredients
  

  • 2 lbs beef chuck roast cut into cubes
  • 3 potatoes cubed
  • 3 carrots sliced
  • 1 onion diced
  • 3 garlic cloves minced
  • 2 tbsp tomato paste
  • 3 cups beef broth
  • 1 cup frozen peas
  • 2 tbsp olive oil
  • 2 tbsp flour
  • 1 tsp fresh thyme
  • 1 bay leaf

Method
 

  1. Set Instant Pot to sauté and brown beef in batches with olive oil. Remove and set aside.

  2. Add onion, garlic, and tomato paste. Cook 1–2 minutes.

  3. Stir in broth, thyme, bay leaf, salt, and pepper. Return beef.

  4. Add potatoes and carrots. Seal lid and cook on High Pressure 35 minutes.

  5. Quick release, stir in peas, and let rest a few minutes before serving.

Notes

Tastes even better the next day. Serve with bread for dipping.
