Ingredients
  

  • 1 lb ground beef
  • 1 onion diced
  • 3 garlic cloves minced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 2 cans diced tomatoes
  • 1 can tomato paste
  • 2 cans beans kidney, pinto, or mix
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • Optional toppings: sour cream cheese, cilantro, lime

Method
 

  1. Turn Instant Pot to sauté mode. Brown beef with onion and garlic.

  2. Add bell peppers and cook 2–3 minutes.

  3. Stir in spices, then tomato paste, diced tomatoes, and broth. Scrape the bottom.
  4. Add beans, seal lid, and cook on high pressure for 15 minutes.

  5. Let pressure release naturally for 10 minutes, then quick release.
  6. Stir, taste, and serve with toppings.

Notes

Adjust spice to taste.
Store leftovers up to 4 days in fridge.
Freezes well.
