Ingredients
  

  • 1 lb ground beef
  • 1 onion diced
  • 3 garlic cloves minced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 2 cans diced tomatoes
  • 1 can tomato paste
  • 2 cans beans kidney, pinto, or mix
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • Optional toppings: sour cream cheese, cilantro, lime

Instructions
 

  • Turn Instant Pot to sauté mode. Brown beef with onion and garlic.

  • Add bell peppers and cook 2–3 minutes.

  • Stir in spices, then tomato paste, diced tomatoes, and broth. Scrape the bottom.
  • Add beans, seal lid, and cook on high pressure for 15 minutes.

  • Let pressure release naturally for 10 minutes, then quick release.
  • Stir, taste, and serve with toppings.

Notes

Adjust spice to taste.
Store leftovers up to 4 days in fridge.
