Ingredients
  

  • 1 lb ground turkey
  • 1 onion chopped
  • 3 garlic cloves minced
  • 1 bell pepper chopped
  • 2 cups chicken broth
  • 1 can diced tomatoes 14 oz
  • 1 can black beans 15 oz, drained
  • 1 can kidney beans 15 oz, drained
  • 1 cup corn frozen or canned
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt & pepper to taste
Toppings: cheese, cilantro, onion, avocado

Method
 

  1. Set Instant Pot to sauté. Cook ground turkey until browned.

  2. Add onion, garlic, and bell pepper. Cook until softened.

  3. Stir in chili powder, cumin, paprika, salt, and pepper.

  4. Add tomatoes, beans, corn, and broth. Stir well.

  5. Seal lid, cook on high pressure for 12 minutes. Natural release 10 minutes.
  6. Stir, taste, and adjust seasoning. Serve with toppings.

Adjust spices to your heat preference.
