Ingredients

  • 10 fresh mint leaves
  • 2 limes
  • 1 cup ice
  • 2 tablespoons lavender syrup or 1 tablespoon for a lighter floral flavor
  • 1 cup sparkling water such as Pellegrino

Instructions

  • Place the lime wedges and fresh mint leaves in a tall, sturdy glass. Using a muddler or the handle of a wooden spoon, press and twist firmly to release the lime juice and mint oils.
  • Add the lavender syrup to the glass, then fill with ice.
  • Pour the sparkling water over the ice and stir gently to combine. Garnish with a fresh lime wedge or mint sprig and serve immediately.

Notes

Use 1 tablespoon of lavender syrup for a subtle floral flavor, or 2 tablespoons for a more pronounced lavender taste.
To make this a cocktail, substitute the sparkling water with vodka or white rum.
For a party batch, multiply the ingredients and prepare the lime, mint, and lavender syrup base in a large pitcher. Add ice and sparkling water when ready to serve to keep the fizz fresh.
Lavender syrup can be made at home by simmering equal parts sugar and water with dried culinary lavender, then straining and chilling.
Best served immediately after adding sparkling water.
