Ingredients
  

  • 1 cup butter softened
  • 2 cups sugar
  • 2 large eggs
  • 1 cup lemon juice freshly squeezed
  • 2 tablespoons lemon zest
  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup powdered sugar for rolling

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together flour, baking powder, and salt until well combined. Set aside.
  • In another bowl, cream together the softened butter and sugar until fluffy, about 3 minutes.
  • Mix in the eggs, lemon juice, and lemon zest until combined.
  • Gradually incorporate the dry ingredients until just mixed.
  • Chill the dough for 30 minutes.
  • Roll the dough into balls, then coat in powdered sugar.
  • Bake for about 10 minutes, until the edges are set and the tops are cracked.
