  • 1/3 cup full fat sour cream plus 1 tbsp, at room temperature
  • 1 1/2 tsp pure vanilla extract
  • 1 tsp vanilla bean paste optional
  • 2 large eggs at room temperature

  • Warm up your oven to 350°F for a start. Grease an 8-inch, non-stick springform pan, then gently lay a piece of parchment paper across its bottom to ensure an easy release.
  • Craft that classic crust by blending graham cracker scraps, brown sugar, and melted butter until all are friends. Spread your mixture into the pan, pressing it slightly up the sides. Let it bake for a golden 10 minutes.
  • Lower the oven to 300°F to set the perfect mood. In a mixing bowl, let your cream cheese achieve its smoothest self with an electric mixer. Gradually welcome sugar into the mix.
  • Blend in warm water (and a splash of lemon, if desired), followed by sour cream, vanilla essence, and a touch of vanilla bean for extra aroma. Ensure it’s a well-behaved, lump-free mixture.
  • Before mixing, introduce each egg individually, allowing the batter to embrace each one fully before inviting the next.
