One Pot Greek Chicken and Lemon Rice

Ingredients
  

  • 5 chicken thighs, skin on, bone in about 1 kg / 2 lb
  • 1.5 lemons, zested use zest and juice
  • 1 tbsp dried oregano
  • 4 cloves garlic, minced
  • 0.5 tsp salt
  • 1.5 tbsp olive oil divided
  • 1 small onion, finely diced
  • 1 cup long grain rice uncooked
  • 1.5 cups chicken broth
  • 0.75 cup water
  • 1 tbsp dried oregano
  • 0.75 tsp salt
  • black pepper to taste
  • chopped parsley optional
  • fresh lemon zest highly recommended

Instructions
 

  • In a ziplock bag, combine the chicken thighs and marinade ingredients. Seal it tightly and let it marinate for at least 20 minutes, preferably overnight.
  • In a large pot, heat 1 tablespoon of olive oil over medium heat. Sear the chicken at skin-side down until golden brown, about 5 to 7 minutes.
  • Remove the chicken and set it aside. Add the diced onion and minced garlic to the pot, stirring until translucent and fragrant, around 3 minutes.
  • Stir in the uncooked rice, coating it in the aromatic mixture, then pour in the chicken broth and water.
  • Nest the chicken back into the pot over the rice, cover, and simmer on low heat for 25 to 30 minutes until the rice is tender and the chicken is cooked through.
  • Garnish with fresh parsley and some extra lemon zest before serving for a refreshing finish.

This dish is perfect for weeknight dinners and makes great leftovers! Just ensure to keep it stored properly in the fridge for the freshest taste.
