Ingredients
  

  • 12 oz penne pasta
  • 3 tbsp olive oil
  • 3 garlic cloves minced
  • 1 –2 tsp red chili flakes
  • 1 can 28 oz whole peeled tomatoes
  • Salt & pepper to taste
  • Fresh parsley chopped
  • Parmesan optional

Method
 

  1. Cook pasta in salted water until al dente. Reserve ½ cup pasta water.

  2. In skillet, heat oil and sauté garlic with chili flakes until fragrant.

  3. Add tomatoes, season, and simmer 10–12 minutes.

  4. Toss pasta into sauce, adding pasta water as needed.

  5. Garnish with parsley and cheese if desired.

Notes

Adjust chili to taste. Sauce can be made ahead and stored in fridge up to 3 days.
