Ingredients
  

  • 2 lbs beef chuck cut into chunks
  • 1 tbsp oil
  • 1 onion chopped
  • 3 garlic cloves minced
  • 3 carrots chopped
  • 3 potatoes cubed
  • 2 celery stalks chopped
  • 2 tbsp tomato paste
  • 4 cups beef broth
  • 1 bay leaf
  • 1 tsp dried thyme
  • Salt & pepper to taste
  • 1 cup frozen peas

Method
 

  1. Sear beef in oil on sauté mode until browned.

  2. Add onion, garlic, and celery; cook until fragrant.

  3. Deglaze with a splash of broth, scraping the pot.

  4. Stir in tomato paste, carrots, potatoes, broth, and seasonings.

  5. Pressure cook on high for 35 minutes.
  6. Quick release, stir in peas, and serve.
