Ingredients
  

  • 4 thick-cut pork chops
  • 2 tbsp olive oil
  • 1 onion diced
  • 3 garlic cloves minced
  • 1 can 28 oz crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tsp sugar optional

Method
 

  1. Season and sear pork chops in olive oil using sauté mode. Remove and set aside.

  2. Sauté onion and garlic until soft.

  3. Stir in crushed tomatoes, tomato paste, seasoning, and sugar.

  4. Nestle chops into sauce. Lock lid and cook on high pressure for 10 minutes.
  5. Let pressure release naturally for 10 minutes, then quick release.
  6. Serve chops with sauce spooned over top.

Notes

Bone-in chops work best for tenderness. Adjust seasoning before serving.
