Instructions
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes.
Add the egg and raspberry jam, mixing until fully combined.
Slowly add the flour, baking powder, and salt, mixing until just combined to form a soft dough.
Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 8-10 minutes or until the edges are lightly golden.
Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
Notes
For a flavored twist, substitute the raspberry jam with your favorite fruit jam.
