Ingredients
  

  • 2 cups grated cucumber use a medium cucumber, no need to peel
  • 1 1/2 cups plain Greek yogurt
  • 2 tablespoons avocado oil
  • 2 tablespoons fresh mint chopped
  • 1 tablespoon lemon juice
  • 1 clove garlic minced or pressed
  • 1/2 teaspoon fine sea salt

Instructions
 

  • Begin by taking a handful of the grated cucumber and gently squeezing it over the sink to get rid of excess moisture, ensuring your tzatziki stays thick.
  • Once you have drained all the cucumbers, place them in a mixing bowl. Stir in the Greek yogurt, avocado oil, chopped mint, lemon juice, minced garlic, and salt until everything is well combined.
  • Allow the mixture to sit for about five minutes to let the flavors meld together, enhancing the overall taste.
  • Serve immediately for a fresh taste or chill for a while in the fridge. It keeps well for up to four days!
