Ingredients
  

  • 1 head cauliflower chopped into florets
  • 1 cup onion diced
  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 2 tablespoons olive oil

Instructions
 

  • Heat olive oil in a pot over medium heat.
  • Sauté onion and garlic until fragrant and translucent, about 3 minutes.
  • Add the chopped cauliflower and stir for a couple of minutes.
  • Pour in vegetable broth and let simmer until the cauliflower is tender, about 15 minutes.
  • Blend until smooth, then season with cumin, salt, and pepper.
  • Serve warm with a drizzle of olive oil or fresh herbs.

Notes

For extra flavor, add a squeeze of lemon before serving.
