Ingredients
  

  • 2 cups cooked chicken shredded
  • 1/2 cup creamy almond butter
  • 1/4 cup soy sauce
  • 2 tablespoons maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon avocado oil
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • 4 large lettuce leaves such as romaine
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers any color
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped peanuts optional

Instructions
 

  • Blend the almond butter, soy sauce, maple syrup, apple cider vinegar, avocado oil, garlic, and ginger in a bowl until smooth.
  • Combine shredded chicken with half the sauce in a large bowl, ensuring it's well coated.
  • Place lettuce leaves on a flat surface and spoon the chicken mixture evenly into each.
  • Layer each with carrots, bell peppers, and cilantro. Drizzle extra sauce on top if desired.
  • Sprinkle with peanuts for crunch, then fold and wrap tightly. Serve fresh.

Notes

For a veggie swap, try tofu or chickpeas instead of chicken. Adding sliced avocado or cucumber gives an extra layer of freshness.
