A hearty, comforting stew with tender beef, carrots, potatoes, and peas simmered in a rich gravy. Ingredients:

Ingredients
  

  • 2 lbs beef chuck roast cubed
  • 3 carrots cut chunky
  • 1 lb baby potatoes halved
  • 1 onion diced
  • 3 garlic cloves minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 2 tbsp flour
  • 2 tbsp oil
  • 1 tsp thyme 1 bay leaf
  • 1 cup frozen peas
  • Salt & pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Coat beef in flour, brown in oil until golden.

  • Add beef, carrots, potatoes, onion, garlic, broth, tomato paste, Worcestershire, and herbs to slow cooker.

  • Cook on LOW 8 hrs or HIGH 4–5 hrs.

  • Stir in peas, season, and cook 15 minutes more.

Notes

Browning the beef makes a huge difference. Adjust thickness with cornstarch slurry if needed.
