A hearty, comforting stew with tender beef, carrots, potatoes, and peas simmered in a rich gravy. Ingredients:

Ingredients
  

  • 2 lbs beef chuck roast cubed
  • 3 carrots cut chunky
  • 1 lb baby potatoes halved
  • 1 onion diced
  • 3 garlic cloves minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 2 tbsp flour
  • 2 tbsp oil
  • 1 tsp thyme 1 bay leaf
  • 1 cup frozen peas
  • Salt & pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Coat beef in flour, brown in oil until golden.

  2. Add beef, carrots, potatoes, onion, garlic, broth, tomato paste, Worcestershire, and herbs to slow cooker.

  3. Cook on LOW 8 hrs or HIGH 4–5 hrs.

  4. Stir in peas, season, and cook 15 minutes more.

Notes

Browning the beef makes a huge difference. Adjust thickness with cornstarch slurry if needed.
