Ingredients
  

  • 1.5 lbs boneless skinless chicken breasts
  • 3 carrots sliced
  • 3 celery stalks sliced
  • 1 onion diced
  • 3 garlic cloves minced
  • 8 cups chicken broth low sodium
  • 2 tsp dried parsley or fresh to taste
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 3 cups egg noodles
  • Fresh parsley for garnish

Method
 

  1. Place chicken, carrots, celery, onion, garlic, broth, parsley, thyme, salt, and pepper in slow cooker.

  2. Cover and cook on low 6–7 hours or high 3–4 hours.

  3. Remove chicken, shred with forks, return to pot.
  4. Stir in egg noodles, cook on high 15–20 minutes until tender.

  5. Taste, adjust seasoning, and garnish with fresh parsley before serving

Notes

Add noodles just before serving to avoid mushiness. For richer flavor, use chicken thighs or bone-in cuts.
