Instructions
In a skillet, melt 1 tablespoon of butter and sear beef pieces until lightly browned on all sides.
Transfer seared beef to the slow cooker and add halved potatoes.
In a small bowl, whisk melted butter, minced garlic, smoked paprika, Worcestershire sauce, beef broth, and Dijon mustard.
Pour the garlic butter mixture evenly over beef and potatoes, then season with salt, pepper, and Italian seasoning.
Cook on low for 480 minutes or high for 240 minutes, until beef is fork-tender and potatoes are soft.
Optional: Broil beef and potatoes for 2-3 minutes for crispy edges.
Sprinkle with chopped parsley or chives before serving.
