Ingredients
  

  • 1 cup carrots chopped
  • 1 cup celery chopped
  • 1 zucchini diced
  • 1 cup green beans chopped
  • 1 can diced tomatoes 14 oz
  • 1 can kidney beans drained
  • 1 can cannellini beans drained
  • 6 cups vegetable broth
  • 3 garlic cloves minced
  • 2 tsp Italian seasoning
  • Salt & pepper to taste
  • 1 cup small pasta ditalini or elbow
  • Olive oil & Parmesan for garnish

Method
 

  1. Add vegetables, beans, tomatoes, broth, garlic, and seasonings to slow cooker. Stir well.

  2. Cover and cook on low for 6–8 hours (or high for 3–4 hours).

  3. Stir in pasta 30 minutes before serving.

  4. Adjust seasonings, garnish with olive oil and Parmesan, and serve warm.

Notes

Add spinach or kale in the last 10 minutes for extra greens. Freeze without pasta for best results.
