Ingredients
  

  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1 zucchini chopped
  • 1 onion diced
  • 2 cups cabbage shredded
  • 2 cans beans cannellini or kidney, drained
  • 1 can 28 oz crushed tomatoes
  • 6 cups vegetable or chicken broth
  • 3 cloves garlic minced
  • 1 tsp oregano
  • 1 tsp basil
  • ½ tsp thyme
  • 1 cup small pasta ditalini or elbow
  • Salt & pepper to taste
  • Parmesan for topping

Method
 

  1. Add vegetables, beans, tomatoes, broth, garlic, and herbs to slow cooker.

  2. Cover and cook on low 6–8 hours (or high 3–4 hours).

  3. Stir in pasta 30 minutes before serving.

Notes

Swap veggies based on season. Freeze without pasta for best results.
