Ingredients
  

  • 3 –4 lb beef chuck roast
  • 1 lb baby potatoes halved
  • 4 large carrots cut in chunks
  • 1 onion quartered
  • 4 garlic cloves minced
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme or rosemary
  • Fresh parsley for garnish

Method
 

  1. Season beef with salt and pepper; sear on all sides in a skillet.

  2. Place carrots, potatoes, and onion in slow cooker.

  3. Mix broth, tomato paste, Worcestershire, garlic, and herbs; pour over veggies.

  4. Place beef on top, cover, and cook on low 8–9 hours or high 5–6 hours.
  5. Shred slightly, garnish with parsley, and serve warm.

Notes

For a thicker gravy, strain liquid and whisk with cornstarch slurry.
