Ingredients
  

  • 2 lbs boneless skinless chicken breasts or thighs
  • 2 cans 15 oz white beans, drained and rinsed
  • 1 cup corn frozen or canned
  • 1 can 4 oz diced green chilies
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp chili powder
  • Salt & pepper to taste
  • 4 oz cream cheese or ½ cup sour cream
  • Optional toppings: cilantro jalapeños, shredded cheese, lime wedges

Method
 

  1. Spray slow cooker insert with oil.

  2. Add chicken, beans, corn, onion, garlic, green chilies, and spices. Pour in broth.

  3. Cook on LOW 6–7 hours or HIGH 3–4 hours.
  4. Remove chicken, shred with two forks, and return to pot.
  5. Stir in cream cheese until melted and smooth.

Notes

For thicker chili, mash some beans before serving.
Rotisserie chicken works well if short on time.
