These Cherry Vanilla Popsicles are a delightful summer treat! I've refined this recipe to ensure a creamy texture with every bite, using the natural sweetness of cherries and a hint of vanilla. Perfect for family gatherings or a refreshing afternoon snack.

Ingredients
  

  • 1 cup frozen cherries from Heinen’s
  • 1 Tbsp. lemon juice freshly squeezed
  • 1/4 cup water
  • 1 Tbsp. agave syrup
  • 1/2 cup raw cashews soaked and drained
  • 1 cup full-fat coconut milk
  • 1/4 cup maple syrup + 2 Tbsp.
  • 1/2 Tbsp. vanilla extract
  • 1 pinch sea salt

Instructions
 

  • Blend cherries, lemon juice, water, and 1 Tbsp of agave syrup until puréed with small chunks.
  • Pour the mixture evenly into 8 popsicle molds and set aside.
  • Clean the blender, then add cashews, coconut milk, maple syrup, vanilla, and salt. Blend until smooth.
  • Fill the molds with the cashew mixture, cover, and insert popsicle sticks. Freeze overnight.
  • To remove, run molds under warm water briefly and enjoy.

Notes

These popsicles can be stored in the freezer for up to 3 months. Simply run warm water over the molds for easy removal.
