Ingredients
  

  • 1.1 lbs gnocchi
  • 2 medium egg yolks
  • 0.5 cup Pecorino Romano finely grated
  • 0.5 cup Guanciale
  • 1/2 tsp freshly ground black pepper
  • 2-3 tbsp reserved pasta water

Instructions
 

  • Bring a large pot of salted water to a boil.
  • Fry the guanciale in a large skillet until golden and crispy.
  • Add the gnocchi to the boiling water.
  • Mix the egg yolks, Pecorino Romano, and black pepper in a small bowl until thick.
  • Add reserved pasta water to the egg mixture and mix well.
  • Once the gnocchi are floating, remove them and add to the skillet with guanciale.
  • Pour the egg mixture into the skillet and toss with the gnocchi.
  • Serve immediately with extra black pepper and grated cheese.
