Ingredients
  

  • 1 pound fresh raspberries
  • 1/2 cup oat milk
  • 3 teaspoons unflavored gelatin powder
  • 1/8 teaspoon salt
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy cream

Instructions
 

  • Arrange six 4-ounce ramekins on a baking sheet and set them aside for later.
  • Blend fresh raspberries until smooth. Strain through a fine sieve to remove seeds, ensuring a silky finish. Aim for about 1 1/4 cups of puree.
  • In a medium saucepan, pour oat milk and sprinkle gelatin over it evenly. Allow it to soak for 10 minutes.
  • Combine raspberry puree, salt, and sugar with the gelatin mixture. Gently heat over medium, stirring until it reaches 150°F, which takes about 3-4 minutes.
  • After removing from heat, add vanilla extract. Let cool to about 120°F, stirring occasionally. Mix in heavy cream until smooth.
  • Strain into a large pitcher and divide among ramekins. Cover with plastic wrap without touching the surface and chill for at least 4 hours, or preferably overnight.
  • To serve, loosen the panna cotta by briefly dipping the ramekins in warm water and then inverting onto a plate.
