Ingredients
  

  • 16 ounces fresh strawberries hulled and halved
  • 0.25 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1.5 cups graham cracker crumbs about 12 full-sized crackers
  • 0.25 cup granulated sugar
  • 5 tablespoons unsalted butter melted
  • 32 ounces full-fat cream cheese softened
  • 1.5 cups granulated sugar
  • 1 cup sour cream room temperature
  • 1 tablespoon vanilla extract
  • 1 tablespoon cornstarch
  • 4 large eggs room temperature

Instructions
 

  • Preheat your oven to 325°F (163°C) and prepare your 9-inch springform pan with a parchment paper base.
  • Combine the graham cracker crumbs, sugar, and melted butter in a bowl. Press this mixture into the base of the pan and up the sides, creating a sturdy crust.
  • In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sugar, sour cream, vanilla, and cornstarch until combined and creamy.
  • Add eggs one at a time, ensuring each is fully incorporated before adding the next. Pour the filling into the crust and swirl in the strawberry sauce before baking.
