Preparation

  • Heat oil in a pot and sauté onions until translucent, about 5 minutes.

  • Pour in the vegetable broth and bring to a simmer.

  • Let simmer for 20-30 minutes until all vegetables are tender.

Notes

Store leftovers in the refrigerator for up to 4 days. This stew can be frozen for 3 months. To reheat, simply warm on the stove.
