Ingredients
  

  • 4 cups kale chopped
  • 1 cup apple chopped
  • 1 cup pomegranate seeds
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice

Instructions
 

  • Wash the kale thoroughly, pat dry and remove the stems, then chop into bite-sized pieces.
  • In a large bowl, combine kale with olive oil and a pinch of salt; massage it gently until softened, about 2-3 minutes.
  • Chop the apples and slice the avocado, then mix them into the bowl along with pomegranate seeds.
  • Drizzle lemon juice over the salad, tossing gently to combine just before serving.

Notes

This salad is best enjoyed fresh but can be prepped in advance.
