Instructions
Wash the kale thoroughly, pat dry and remove the stems, then chop into bite-sized pieces.
In a large bowl, combine kale with olive oil and a pinch of salt; massage it gently until softened, about 2-3 minutes.
Chop the apples and slice the avocado, then mix them into the bowl along with pomegranate seeds.
Drizzle lemon juice over the salad, tossing gently to combine just before serving.
Notes
This salad is best enjoyed fresh but can be prepped in advance.
